Pork
Pigs have always been raised in Casentino and local pork products are of excellent quality. Fed on chestnuts and acorns, the meat is more flavourful and denser. In the early 14th century pig-raising began to be regulated, and passages relating to this subject can still be found in old municipal statutes. The most typical pork products are ham, sausage, migliaccio (blood pudding), ciccioli (scraps of pork fat after rendering), capaccia, rigatino (streaky bacon), and many others.
